The classic kerala beef fry is the favorite curry of most non-vegetarian Keralites. There is no celebration without beef fry for non-vegetarians. Beef fry makes a great appetizer when served with some onion salad. It is a side dish for rice, and it is also an excellent combination of Indian bread like chappathi.
4 lb (2 kg) boneless stew beef (cut in quarters)
1 teaspoon mustard seeds
3 medium onions, sliced
10 cloves of garlic, minced or crushed
3 tablespoon minced ginger
3 sprig curry leaves, stem removed
2 tomatoes, sliced
2 tablespoon coriander powder
1 tablespoon paprika
1 teaspoon turmeric powder
3 tablespoon meat masala
1 teaspoon gram masala
1 1/2 teaspoon salt
Cooking Directions
1. Cut the stew beef into small cubes and wash it well
2. In a wide and shallow pan, on medium flame, heat oil. Add the mustard seeds and cover it with a lid. Wait for the mustard seed to finish popping.
3. Add onion, ginger, garlic, curry leaves, and ½ teaspoon salt. Saute until the onions are almost soft.
4. Next add coriander powder, paprika powder, turmeric powder, meat masala. Stir everything together.
5. Add the beef with one teaspoon salt, and combine everything. Cover and cook for 15 min on medium flame.
6. After 15 minutes bring up the heat to a high flame, add the tomatoes. Cook for 15 more minutes or until beef becomes soft and tender. Stir occasionally until all the liquid in the beef is cooked down. Bring down the flame to low. Add 1 teaspoon of gram masala and stir it with the beef.
7. Turn off the flame. The beef fry is ready to serve.
