Ingredients
3 plantains (Raw or green)
3 cups of water, divided
1 cup shredded coconut
1 medium onion, sliced
5 cloves of garlic, minced
1 sprig curry leaves, washed, and stem removed
1 jalapeño pepper, diced (optional)
4 tablespoons of coconut oil, divided
1 teaspoon mustard seed

Cooking Directions
1. Prepare a bowl with 2 cups of water.
2. Remove both ends of each plantain and peel off the skin.

3. Split this into four long halves and cut it into small pieces. Add the pieces to the bowl with water as you cut it. Adding plantains to the water will prevent discoloration.
5. Heat oil in a pan. Add mustard seeds and cover it with a lid. Allow the mustard seeds to pop.
6. Add onion, jalapeños, garlic, and curry leaves to the pan. Make sure to wash and dry the curry leaves before putting it in the oil. Stir this for a minute.
7. Wash and drain the plantain pieces. Add this to the onion and stir. Add one cup of water. Cover and cook for ten minutes.
8. Remove the lid and mix well. Add coconut, turmeric, and salt to the center of the pan.
9. Cover the coconut with the plantains. Put a lid on the pan and cook for ten more minutes on medium heat.
10. Take off the lid and stir everything together. Stir until any left of over water in the pot dry out.
