Chicken Rice Soup


This chicken rice soup is a mix of American and South Indian cooking.  It is a delicious and healthy soup that boost your immune system.  It is a natural soup to prepare with plenty of vegetables, that will warm up anyone during the winter season.

Ingredients

1  chicken breast

1 small onion finely chopped 
1 carrot, diced (about ½ cup)
½ cup broccoli, finely chopped
1 sprig curry leaves, stem removed 
1 tablespoon Italian seasoning
1 cup cooked rice
5-6 cups water
Salt and pepper

Cooking Directions

1. In a large pot, cook the chicken on the stove top in 5 cups of water for 2-3 hours in low flame.  Add about 1/2 teaspoon salt or as needed. If you notice less water in the pot as you cook, add more water.  Take the cooked chicken breast out of the pot and shred it into small pieces with a fork and knife. Then add it back into the pot. 

2. Add all the vegetables and Italian seasoning and cook for 15 more minutes.

3. Add the cooked rice, and also add more salt and pepper as needed.
