Lemon Curry

Lemon curry is a very ancient curry from Kerala, India. Some people still make this curry. Lemon curry recipe is my mom’s famous recipe. Almost everyone who tried this curry at our home asked us for the recipe.   You can make this curry with fried coconut gravy, sautéed onions, and lemon juice.  It’s delicious and easy to make compared to many other curries.

Ingredients for Coconut Gravy

3 tablespoons coconut oil or any cooking oil
1 teaspoons fenugreek seeds
2 dried red chiles
3 shallots
1 tablespoon coriander
1 cup dried coconut powder

Ingredients for Sautéed Onions


3 tablespoons coconut oil or any cooking oil 1 teaspoon mustard seeds
2 medium red onions, sliced
3-4 cloves of garlic, minced
1 tablespoon minced ginger 
1 jalapeño or 2 chiles
1 sprig curry levels, stem removed
2 lemons, juiced
1/2 teaspoon salt
 

Directions for Coconut Gravy

 

1. Heat 3 tablespoons of oil in a pan over medium heat

2. Add fenugreek seeds, cover with a lid, and wait for it to pop.
Add red chiles, coriander, and shallots.  Saute until soft, and move this into a plate.
 
3. Add the coconut to the same pan and fry until it’s dark brown.  Stir continuously to prevent burning.  Move it to a plate and allow it to cool.

4. After it cools, grind everything into a paste. Add a half cup of water if necessary.

 

Directions for Sautéed Onions

 

1.  Heat 2 tablespoons oil in a pan

2.  Add mustard seeds and cover it with a lid.  Wait for the mustard seeds to finish popping.

3.  Add onion, ginger, garlic, jalapeño, curry leaves, and salt. Sauté until the onions are soft.

4. Pour the coconut gravy into the Sautéed onion. Add 1/2 cup of water into the blender to remove the rest of the gravy. Pour 1/2 more cup of water into the curry.  Cover the curry with a lid and let it boil.

5.  Juice the lemons and pour it into the curry, mix well, and turn off the flame.  Taste and add more salt if needed.  Cover the curry and keep it aside for few minutes to bring out the full flavor.

 

 

Enjoy the lemon curry with warm rice
