Unlike regular pork meat, pork stew meat has less fat. If you are not a fan of having fat and borns in your pork curry, this recipe is for you. The secret ingredient in this curry is the lemon juice that we squeeze on top at the end. It brings out the best flavors of this curry. Pork curry can be a great side dish for rice or bread.

Ingredients
4 lb (2 kg) pork stew meat, cut into small cubes
3 tablespoon oil
1 teaspoon mustard seeds
1 large onion, sliced
7-9 garlic cloves, minced
3 sprig curry leaves, stem removed
3 tablespoon minced ginger
1 1/2 teaspoon salt, divided
2 tablespoon paprika powder
3 tablespoon black pepper powder, divided
1 tablespoon coriander powder
1 ½ tablespoon garam masala, divided
1 teaspoon turmeric powder
2 tomatoes sliced
1/2 cup coconut pieces
Juice of a lime
3 tablespoon oil
1 teaspoon mustard seeds
1 large onion, sliced
7-9 garlic cloves, minced
3 sprig curry leaves, stem removed
3 tablespoon minced ginger
1 1/2 teaspoon salt, divided
2 tablespoon paprika powder
3 tablespoon black pepper powder, divided
1 tablespoon coriander powder
1 ½ tablespoon garam masala, divided
1 teaspoon turmeric powder
2 tomatoes sliced
1/2 cup coconut pieces
Juice of a lime
Cooking Direction
1. Cut pork stew meat into small pieces and wash it three times with salt to clean.
2. Heat 3 tablespoon oil in a pan.
3. Add mustard seeds and allow it to pop.
4. Add onion, ginger, garlic, and curry leaves.
5. Add 1/2 tablespoon salt, paprika powder, coriander powder, 1 ½ tablespoon pepper powder, turmeric powder, and 1 tablespoon garam masala. Mix everything with the onion.
6. Add the pork and mix well. Cover and cook between medium and high flame for 10 minutes.
7. Add tomato and coconut pieces. Cook until all the water evaporates, stirring occasionally. Finally add 1 teaspoon salt, 1 tablespoon black pepper powder, juice of a lime, and mix well.
Pork curry is ready to be served as a side dish for rice, or any bread.
