Red chile sauce complements boiled yuca or other root vegetables in Kerala, India. This sauce adds a spicy flavor to anything that you eat with it. Although there are different methods for making red chile sauce (mulaku chammanthi), this is one of the tastiest recipes. If you like red chile sauce, this will make your mouth water.
Ingredients
15 shallots, peeled and cut in half.
7 dried red chile
1 sprig curry leaves, stem removed
1 cherry size ball of tamarind
3 tablespoon coconut oil, divided
1 tablespoon of water
1/4 tablespoon salt

Cooking Directions
1. Heat one tablespoon oil in a pan.
2. Fry the chiles in oil stirring frequently. Transfer it to a plate when the chile starts to turn dark. Keep the remaining oil in the pan.
5. Finally, add the third tablespoon of coconut oil and mix everything well.
6. Now the chile sauce is ready to be served. This chile sauce is a perfect combination for boiled yuca or with any other root vegetables.
