Carrot stir-fry (carrot thoran) is a colorful and delicious Kerala side dishes for rice. Carrots combined with onion, garlic, coconut and curry leaves creates a unique flavor. This stir-fry adds, color, taste, and texture on to your dish with plenty of health benefits. Carrots is filled with vitamin A which is very good for healthy eyes. It is also rich in vitamin C and vitamin B-6, dietary-fibers, and anti-oxidants. Studies show that carrots help in preventing cancer and slow down the aging of cells in our body. Ingredients
5-7 medium carrots, shredded
1 onion, diced
4-5 cloves of garlic, minced
1 sprig curry leaves, stem removed
2 small jalapeño pepper, cut into small rounds
3 tablespoon vegetable oil
1 teaspoon mustard seed
1/2 teaspoon salt
1 cup shredded coconut
1/2 teaspoon turmeric powder
Cooking Direction
1. Shred the carrots using the small blade on a food processor, or you can use a shredder.
2. Heat oil in a pan
3. Add mustard seeds, cover it with a lid and allow it to pop. Remove the lid when it starts to stop popping.
4. Add onion, garlic, curry levels, and jalapeño pepper. Sauté this for a minute
5. Add carrots, add 1/2 teaspoon salt and mix well. Cover and cook for 5 minutes.
6. After 5 minutes, take off the lid and stir everything together.
7. Add coconut and turmeric powder to the center. Cover this with carrots, and cook for 10 more minutes.
8. Remove the lid, add 1/2 teaspoon salt, and stir together everything. Taste and add more salt if needed.
