Tilapia stir fry is a healthy, simple, and easy recipe that is rich in flavor and gentle in spice. It’s delicious and healthier than fried fish. The only spice we use is turmeric powder, which has a very light flavor. If you would like it to be spicy, you just have to add more green chili. Ingredients
2-3 tablespoon coconut oil
1 Lb tilapia 1lb cut to small pieces
1 onion, diced
5-7 cloves of garlic
2 tablespoons crushed ginger
3 green chile, sliced
1 cup of shredded coconut
4-5 pieces of fish tamarind (kudampuli), soaked 1/2 cup of warm water
1/2 teaspoon turmeric
1/2 teaspoon salt 2 stems curry leaves
Cooking Directions
1. Wash kudampuli (fish tamarind or garcinia cambogia) in water to remove any dust from sun drying and smoking. Then soak it in water 1-2 inches above the kudampuli.
2. Cut the tilapia fillets into small pieces and add it into a pan.
3. Add diced onion, ginger, garlic, green chile, curry leaves, shredded coconut, turmeric powder, salt, and the fish tamarind with the water into the pan.
4. Mix everything together
5. Cover and cook for 10 minutes
6. Take off the lid, mix everything together and cook until the water dries out, or until 5 more minutes.
7. Tilapia stir fry is ready to be served with some warm rice.
Tips: As the curry sits in the pot, the fish tamarind (kudampuli) will release its flavor. You can find kudampuli in South Indian grocery stores.
