This Simple tomato yogurt curry is a fantastic curry worth trying. First, we cook fresh tomatoes, onion, and ginger in boiling water with turmeric powder, and then we season it with mustard seeds, shallots, dried red pepper, and curry leaves. This curry is so natural and flavorful to have with some warm rice.
In Kerala, seasoned yogurt (curd) curry is typical in every home. Although we use many different ingredients in yogurt, we rarely make it with tomatoes. Even though many other curries are equally delicious, we only make them occasionally. If you make this curry once, you will always make it.
Ingredients
1 medium onion, sliced
1 tablespoon minced garlic
1 tablespoon minced ginger
1 sprig of curry leaves, stem removed
1 teaspoon turmeric powder
1 teaspoon salt
2 cups water
2 cups plain yogurt

1 teaspoon mustard seeds
4 shallots, sliced
4 dried red chiles, broken
1 sprig of curry leaves, stems removed

1. Boil tomatoes, onion, garlic, ginger, curry leaves, turmeric powder, and salt in water.
2. When the ingredients are soft, mash them with a masher or a big spoon.
3. Boil it for five more minutes over a high flame and turn it off.
4. Set aside for the curry to cool.
5. Mix the yogurt well to clear all the lumps. The yogurt shouldn’t be too thick.
6. Once the curry cools, add 2 cups of plain yogurt (curd). If you have homemade yogurt (curd), it s best to use that. If that is not available, use store-bought plain yogurt.
7. Heat the curry on low flame.
8. Turn the flame off when the sides of the curry start to bubble.
Seasoning Directions
You can serve the tomato yogurt curry with warm rice.
