Stir-fried vegetable (thoran) is a must-have side dish for rice in Kerala, India. Broccoli is not a common vegetable in Kerala, but it is for the Keralites living in America. It is one of the healthiest vegetables around. Broccoli is low in fat and cholesterol. It is an excellent source of calcium, iron, vitamin A, vitamin C, vitamin E, and the list will go on. Broccoli thoran (stir-fry) is just a way of giving broccoli some South Indian flavor. When you mix American and Indian flavors, it becomes South Indian American (SIA) flavor.

Ingredients
2 lb Broccoli
1 cup shredded coconut
1 onion, diced
4-5 garlic cloves, minced
1 sprig curry leaves, stem removed
2 small jalapeño pepper
3 tablespoon vegetable oil
1 teaspoon mustard seeds
1/2 teaspoon salt
1/2 teaspoon turmeric powder
2 lb Broccoli
1 cup shredded coconut
1 onion, diced
4-5 garlic cloves, minced
1 sprig curry leaves, stem removed
2 small jalapeño pepper
3 tablespoon vegetable oil
1 teaspoon mustard seeds
1/2 teaspoon salt
1/2 teaspoon turmeric powder
Cooking Directions
1. Trim broccoli florets and cut into small pieces. Peel off the hard skin from the broccoli stalks and chop it into small pieces. Set aside.
2. Heat oil in a pan
3. Add mustard seeds, cover it with a lid, and allow it to pop. Remove the lid only after the popping sound stops.
4. Add onion, garlic, curry levels, and jalapeño pepper. Sauté this for a minute
5. Add broccoli, add 1/2 teaspoon salt and mix well. Cover and cook for 5 minutes.
6. After 5 minutes, take off the lid and mix everything.
7. Add coconut and turmeric powder to the center. Cover this with broccoli, and cook for 10 more minutes.
8. Remove the lid, and mix everything together. Taste, and add more salt if needed.
Broccoli stir-fry (broccoli thoran) is ready to be served with rice.
