Jackfruit Seed and Green Mango Curry (Chakkakuru Manga)

Jackfruit seed and Green Mango Curry (chakkakuru manga) is a typical Kerala curry.  Especially during the fruit season.   Jackfruit seeds are very rich in protein and minerals. Green mango is rich in vitamin C. The nutty flavor of jack fruit seed, and the sour flavor of green mango creates an irresistible flavor when cooked in coconut gravy. The ingredients in this curry make it one of the nutrias and delicious curry in Kerala cuisine.
Ingredients

14.10 oz (.88 lbs) bag of jackfruit seed (or fresh jackfruit seed)
1 Mango
1 cup shredded coconut
1/2 teaspoon turmeric powder
1 clove of garlic
Water as needed (about 4 cups)
Seasoning Ingredients

4-5 shallots
3-4 dried red chile
1 sprig curry leaves, stem removed
1/2 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds (uluva)
3 tablespoon oil
Directions
1. Add frozen jackfruit seeds into a pot with water an inch above the seeds. If you are using fresh seeds, remove the outer skin. Cover and boil. (see the tips for removing skin)
2. Remove the skin and cut the green mango into small pieces.
3. Take out a piece of jackfruit seed with a fork, cool it and taste it. It should be very soft like a cooked potato when you bite into it.



4. Add the cut mango, turmeric, and salt into the jack fruit seeds.  Cook until the water comes to a boil and the mango is soft.
5. Use a masher to mash jackfruit seeds and mango.
6. Grind the coconut and garlic clove with water an inch above the coconut. Add this to the curry.
7. Cook until you see bubbles on the side of the curry. Don’t let the curry boil.
Seasoning Direction

1.  Heat oil in a pan.

2.  Add mustard seeds.  Cover with a lid and allow it to pop. 
3.  Add fenugreek seeds, cover with a lid and let it pop. 
4.  Add red chili, shallots, and curry leaves. Sauté everything.

5.  Power this seasoning into the curry, mix well and cover it with a lid for five minutes.  

Now the chakkakuru manga or jackfruit seed curry is ready to be served.
Tips:
An easy way to peel fresh jackfruit seeds are by boiling them in the water.  Add jackfruit seeds into a pot and add water an inch above the seeds.  Boil this for 20-25 minutes or until soft.  
After cooking it, remove it from the stove and drain the water. Spread this on a baking sheet to dry. The plastic-like outer shell of the jackfruit seeds should be cracked open by now.  You can easily peel this off with your hand.  If some of them are not cracked, you can use a knife to break it open. The brown skin under it is edible. When you prepare the jackfruit seed this way, you don’t need to cook it again after peeling the skin. You can cook the mango, and add the jackfruit seed into it.
