Dosa is a famous dish in South India. Although there are many different types of dosas, paper-dosa is very popular. It is called paper-dosa because it is made very thin as a paper. You can make this in different sizes. You can serve paper-dosa for breakfast, lunch, or dinner. Adults and children equally love paper-dosa. It is not only tasty but also an excellent source of carbs and iron. It will take some time to soak rice, and ferment the batter overnight. Once the batter is made, it’s easy to make dosa. The batter can be refrigerated up to a week. Paper dosa, along with some famous vegetarian side dishes like “sambar” or “coconut-chutney” is the perfect South Indian combination. Ingredients
1 cup idli rice
1 cup long grain rice
1/2 cup urad dal
1 teaspoon fenugreek seed
How to Make Dosa Batter
1. Soak idli rice, long grain rice, and fenugreek seeds in water. The water should be one inch above the rice. Soak for eight hours.
2. Soak urad dal in water. Add water one inch above the urad dal. Put urad dal in water an hour before grinding.
3. Wash rice and urad dal until the water starts to run almost clear.
4. Add rice and urad dal halfway up to the blender. Add water one inch above the rice. Blend well and pour the mixture into a big bowl. Cover and put the batter in warm place for about eight hours for fermentation. If your room temperature is cold, preheat your oven to 170ºF. Turn off the oven, then place the batter inside the oven until it rises.
5. Once the batter starts to rise, you will see small bubbles forming on top. Add salt as needed and mix well.
Cooking Direction
1. Heat a pan on the stove on medium flame.
2. Rub the pan with some oil using a brush.
3. Pour 1/2 cup of batter on the stove
4. Form a big circle with the batter. Put the round bottom of a big spoon in the center of the circle and move it in a circular motion until you form a big thin round shape. Cover and cook.
5. Once the batter stars to firm, pour 1/2 teaspoon oil around the batter and on top. Cover and cook until one side of the dosa starts to detach from the pan.
6. Flip over the dosa to the other half with a spatula.
7. Remove from stove and serve with sambar, coconut chutney, or any of your favorite curry.
