Coconut Chutney or Chammandi for Dosa

Coconut Chutney is a typical South Indian side dish with dosa, idli, vada, and even rice. It’s one of the easy curries to make. Coconut is a rich source of potassium, carbohydrate, sodium, iron, magnesium, and vitamin C. Coconut chutney is a delicious and healthy side dish to have. 

Ingredients for the chutney
1 cup grated coconut 
1/2 cup curd (plain yogurt)
1 small piece ginger 
1 shallot, peeled
1/2 teaspoon salt 
Water one inch above the coconut

Seasoning  Ingredients
3 shallots, split in half and cut into small round pieces
3 or 4 red chile peppers, broken in half
1 sprig curry leaves, stem removed
1 teaspoon mustard seeds
3 tablespoon of vegetable or coconut oil
Directions

1. Put coconut, shallot, ginger, curd, and salt into the blender.
2. Add water one inch above the coconut
3. Grind all the ingredients into a smooth, thick liquid. Pour this into a bowl
Seasoning Directions
1. Heat oil in a pan
2. Add mustard seeds, cover with a lid, and allow the mustard seeds to pop.
3. When popping almost stops, add red chili, shallots, and curry leaves. Sauté this until the onions are soft. Add this to the chutney and mix well. Cover it with a lid for 2-3 minutes.
Remove the lid and serve coconut chutney with dosa or idli.
